Mint Jelly

Just outside the kitchen door, all along the entire back of the farmhouse, grows a mass of invasive mint. Despite my best efforts pulling a bunch up and curtailing it this spring, it still took over the area.
So what's a girl to do?
 
Sans Green food coloring of course.

I already gave some away, but this is a GREAT idea! Perhaps I shall stop cursing the unknown previous owner of this house that planted it. ;-)

Sometimes you just have to make the best of things and it looks like you did! Every time I see the beautiful views from around your home, I get so envious!! I'm trying to control that, but's it's hard!!
